The New Item

Taco Bell and Milk Bar are rolling out their third co-branded dessert on October 15: the Milk Bar Birthday Cake Empanada, a crispy, golden handheld filled with cake batter-flavored filling, topped with pink frosting and rainbow sprinkles, and priced at $3.49 at participating locations nationwide while supplies last. The item was first teased at Taco Bell's Live Más LIVE event earlier in 2026.

For c-store operators watching QSR dessert moves, the format choice is notable. Taco Bell is leaning into the empanada — a back-of-house friendly, fried handheld — as its dessert delivery vehicle, a format with obvious parallels to the pastry and hand-pie dayparts that convenience retailers have been building out at the foodservice counter. The limited-time nature of the drop, paired with a recognizable co-brand, is a proven traffic driver that the channel has increasingly mirrored with its own LTO dessert programs.

Collab History

This is the third chapter of the Taco Bell–Milk Bar partnership. The two brands debuted Strawberry Bell Truffles in 2022 — Milk Bar's signature Cake Truffles paired with pieces of Taco Bell's Crunchy Taco Shell. In 2025, they returned with Birthday Cake Churros, warm crispy churros filled with birthday cake frosting and finished with pink confetti sprinkles. Each successive item has leaned harder into Milk Bar founder Christina Tosi's signature Birthday Cake flavor profile, which has developed a broad consumer following since the bakery's 2008 launch.

"What I love most is seeing a flavor people know so well show up in a way they never expected," said Tosi, Chef and Founder of Milk Bar. "The best part is you don't need a birthday to enjoy it."

Liz Matthews, Global Chief Food Innovation Officer at Taco Bell, framed the collaboration around menu surprise: "The Milk Bar Birthday Cake Empanada lets us take an iconic Birthday Cake flavor and reimagine it as a crispy Taco Bell treat that's nostalgic, unexpected and made for celebrating everyday moments."

Loyalty Angle

Taco Bell is activating its Rewards Members program around the launch in a move that underscores how loyalty infrastructure shapes LTO execution at scale. From October 15 through October 28, Rewards Members who have added a birthday to their profile can choose between a free Milk Bar Birthday Cake Empanada or a regular Mountain Dew Baja Blast Freeze as their birthday reward at participating locations, redeemable via the Taco Bell mobile app while supplies last.

The birthday-reward mechanic is worth tracking for c-store operators building out their own loyalty programs. Tying a high-visibility LTO to an existing birthday-reward trigger costs nothing in incremental loyalty infrastructure while generating a measurable redemption window — in this case, a defined 14-day claim period that also functions as an LTO sales accelerator. As convenience retailers continue to invest in app-based loyalty programs and foodservice LTO strategies, QSR mechanics like this offer a replicable template for driving trial of new dessert SKUs.
