Schlotzsky's Deli is rolling a Philly Cheesesteak limited-time lineup across its 280-plus locations in 24 states beginning September 1, with availability running through January 11. The Austin-based fast-casual chain is fielding the new items in three formats — a sub, a calzone, and a flatbread — marking the first hot extension of its Stacked Subs platform. All three builds center on thin-sliced marinated steak, white American cheese, and roasted vegetables.
The core Philly Cheesesteak Sub comes on Schlotzsky's Artisan white sub bun with roasted green peppers and caramelized onions, sized as a Medium (8-inch) or Giant (12-inch). The Philly Cheesesteak Calzone folds the same steak-and-pepper profile with mozzarella and the brand's signature sauce into an oven-baked format. The third option, the Chipotle Cheesesteak Flatbread, layers roasted red and green peppers with caramelized onions and a chipotle mayo drizzle on Schlotzsky's signature flatbread crust, available as a full entrée or through the chain's Mix & Match program. All three items are also catering-eligible, which extends the ticket opportunity for franchisees handling group orders.
Menu Strategy Context
The move reflects a pattern playing out across fast-casual and QSR-adjacent foodservice channels: operators are mining iconic regional sandwiches — cheesesteaks, Italian beefs, Nashville hot chicken — for LTO traction, using familiar flavor cues to drive trial without requiring back-of-house complexity. For Schlotzsky's, the multi-format approach lets a single protein prep anchor three menu slots, a practical efficiency for franchise operators managing labor and food cost.
Executive Chef Jennifer Keil framed the lineup as a platform play rather than a one-off: "This menu takes the core flavors people know and love and explores them across three distinct formats, giving guests a classic Philly Cheesesteak sub alongside two new interpretations." The calzone and flatbread formats in particular push the cheesesteak concept into territory where Schlotzsky's has existing back-of-house capability, leveraging oven infrastructure already in place for the brand's specialty pizzas and sourdough sandwich program.

With more than 280 restaurants across 24 states as of late June, Schlotzsky's operates at a scale where a systemwide LTO can generate meaningful category data on consumer appetite for hot, customizable sandwiches. The Mix & Match and Meal Deal attachment options built into the sub and flatbread SKUs are designed to lift average check — a priority for franchisees in an environment where inside-sales comps remain a key performance lever. The catering extension adds an incremental revenue channel that single-location operators can access without additional equipment investment.
