The New Items
Milk Bar is returning to savory foodservice for the first time in years, teaming with Beyond Meat (NASDAQ: BYND) on two limited-time menu items available August 26 through October 5 at flagship locations in New York City and Los Angeles. The collaboration marks a notable format shift for the 10-unit bakery chain, which built its identity around dessert-forward offerings before fielding sustained consumer demand for plant-based savory options.
The two LTOs are a Beyond Breakfast Sausage & Egg Spiral — a flaky pastry wrapped around Beyond Breakfast Sausage patty pieces, egg, and melted cheese — and a Beyond Meatball Parm Roll, which layers Beyond Meatballs, marinara, onions, and cheese inside baked dough. Both items are handheld and positioned as daypart-spanning grab-and-go formats, a structure increasingly common in foodservice-at-bakery and specialty café programs.
Why the Collab Matters
For Beyond Meat, the partnership extends its retail and foodservice placement strategy into specialty brick-and-mortar. "One of our biggest goals at Beyond Meat is making plant-based eating more accessible by showing up in the places people already know and love," said Danielle Armbrust, VP of Marketing at Beyond Meat. The brand has leaned on high-visibility foodservice collaborations as a key lever in a period when plant-based category volume has faced headwinds at grocery retail.
For Milk Bar, the savory pivot taps flexitarian demand without requiring a full menu overhaul. Christina Tosi, Founder and Chef of Milk Bar, framed the project as creative exploration rather than a permanent category expansion: "Beyond Meat is the perfect partner to create something accessible, surprising, and wildly craveable at the same time, that still feels unmistakably Milk Bar." The limited-time window and two-market rollout give the brand a low-risk read on savory attachment rates before any broader commitment.
Foodservice Context
The plant-based protein segment has struggled to sustain the growth rates it posted in 2019–2021, with SPINS and industry data pointing to softer velocity in traditional grocery channels. Foodservice placements — particularly in experiential, brand-name bakery and café formats — have emerged as a recovery pathway for suppliers like Beyond Meat, reaching flexitarian consumers in settings where novelty and occasion drive the purchase rather than a direct swap against conventional meat. Milk Bar's fanbase skews urban, younger, and digitally engaged, making it a logical proving ground.
Milk Bar currently operates 10 locations across NYC, Los Angeles, Washington D.C., Las Vegas, and Chicago, and fulfills nationwide orders through an e-commerce care package platform. For consumers outside those markets, recipes for both LTOs will be posted to MilkBarStore.com. That digital extension broadens the campaign's reach without additional distribution costs and mirrors the recipe-as-marketing model gaining traction among specialty foodservice brands.
