The Fall Menu Push

Gregorys Coffee, the New York City-born specialty coffee chain with more than 50 locations, is leaning into fall with a limited-time Banana Foster-inspired beverage lineup, returning pumpkin seasonal drinks and a revamped breakfast sandwich program featuring fresh-cracked eggs and up to 47 grams of protein. The new menu is available at Gregorys coffee houses through October, with the chain marking its 20th anniversary this year under the Craveworthy Brands multi-brand restaurant platform.

The Banana Foster platform spans three formats: a Banana Foster Latte built on espresso, banana, butter rum, cinnamon sugar and oat milk; a Banana Bread Chai pairing butter rum and spiced chai; and a Banana Foster Matcha Latte using ceremonial-grade matcha. The iced version of the latte adds a toasted maple rum vegan foam. Returning pumpkin-season staples — a Pumpkin Spice Latte and Smashing Pumpkin Cold Brew — round out the fall beverage rotation. "Banana Foster is a dessert everybody already knows, and getting the banana right took the longest," said Gregory Zamfotis, founder of Gregorys. "Once we had it, it carried across espresso, matcha and chai."

Breakfast Sandwich Upgrade

On the foodservice side, Gregorys is repositioning its morning daypart around five house-made breakfast sandwiches: Ham, Egg & Cheese Croissant; Bacon, Egg & Cheese English Muffin; Sausage, Egg & Cheese English Muffin; Bacon, Egg & Cheese Croissant; and a Prosciutto, Egg & Brie Baguette finished with arugula, brie spread and fig jam. Every sandwich uses two eggs cracked in-store. "That is not the fast way to do it, and it is why they taste the way they do," said Jax Sperling, Vice President of Culinary & Supply Chain for Craveworthy Brands. The move mirrors a broader specialty coffee and foodservice convergence that has pushed independent and regional coffee chains to compete on morning protein counts alongside QSR incumbents.

Loyalty Program Incentives

Gregorys is using the fall season to activate its Gregulars loyalty program on two calendar hooks. On National Coffee Day (September 29), any Rewards member who makes a purchase earns 400 Gs — the chain's points currency — redeemable for a free drip coffee on the next visit. On National Frappe Day (October 7), members receive a buy-one-get-one-free frappe offer. Loyalty-driven limited-time-offer mechanics have become a standard traffic driver for specialty coffee operators, and for a 50-plus-unit regional chain competing against national players, the Gregulars program represents a key retention lever. The strategy aligns with broader loyalty trends across convenience and coffee channels, where operators are tying seasonal menus directly to app engagement and points redemption to sustain visit frequency outside the summer peak.
