Seasonal Lineup

Corner Bakery Cafe is leaning into fall daypart traffic with the return of its Pumpkin Latte — available hot, iced, or as a cold brew — and a nine-item fresh-baked lineup designed to drive check frequency from morning coffee through afternoon snacking. The Dallas-based fast-casual chain operates in 18 states and Washington, D.C.

Beyond the Pumpkin Muffin anchoring the seasonal story, the bakery case rotation adds a Lemon Muffin, Lemon Tart, Salted Brown Butter Krispie Bar, Pecan Chocolate Chunk Bar, Tuxedo Butter Cake, Almond Butter Cake, Chocolate Peanut Butter Cake, and Fudge Brownie. Pumpkin items are slated to run through December 31, subject to availability by location.

"Fall is a great time to bring new energy to the bakery case," said Erin Hasselgren, president of Corner Bakery Cafe. "This fall lineup gives guests more variety throughout the day, whether they're starting the morning with coffee, taking a break in the afternoon or bringing something sweet back to the office."

Catering Play

The chain is pairing the LTO rollout with a catering push: 15% off orders of $200 or more placed at participating locations throughout September. Catering packages span breakfast selections, sandwich and panini trays, salads, soups, fresh-baked sweets, and beverage packages — a broad enough spread to cover corporate meeting drops and team meals alike.

For fast-casual operators, bundling a seasonal product launch with a catering incentive is a familiar tactic to maximize fall foot traffic and off-premise revenue simultaneously. Catering as a percentage of fast-casual sales has grown steadily post-pandemic as hybrid work schedules create irregular but high-volume office meal occasions. Corner Bakery's positioning — neighborhood bakery heritage, fresh-baked credibility — suits the category well, particularly against sandwich-centric competitors that lack a strong pastry identity.

Channel Context

While Corner Bakery Cafe operates in the fast-casual restaurant segment rather than the c-store forecourt, its foodservice model maps directly onto trends that convenience foodservice operators are tracking closely: dispensed beverage LTOs tied to seasonal flavor calendars, bakery-case velocity as a morning daypart driver, and catering as a revenue layer on top of core foot traffic. Pumpkin spice remains one of the highest-performing seasonal flavor platforms across all foodservice channels each fall, consistently moving units in bakery and dispensed beverage programs from QSR through convenience.

For c-store operators benchmarking their own fall bakery and hot-beverage programs, Corner Bakery's multi-format approach to the Pumpkin Latte — hot, iced, cold brew — reflects the same format flexibility that has driven dispensed beverage attach rates at larger convenience chains.
